A quick search of menudo in Redding draws up five taquerias, one which no longer makes the tripe soup on the weekends.
Few things are as disappointing as waking up early on a cold weekend morning craving this comfort dish only to find they no longer serve menudo.
Which is why I needed to write this review - for those like me who enjoy the authentic homemade soup, the best place I've found thus far in Redding is not in a taqueria, but in a homey little Italian family restaurant called Pasta Pronto.
I've not come here for anything except their Mexican food, which is the real standout:
Menudo:
Their menudo is served the way I prefer it, without hominy; made with love from a family recipe, simmered for 4-5 hours with pork trotters as the base of the broth and the classic honeycomb tripe as the rest. Served with wedges of lime, a side of freshly minced white onion and cilantro, and (drumroll please) HANDMADE corn tortillas. Not quite as fragrant as the ones my best friend makes, because she makes her own masa while these are made from dried corn flour but hey, this is still a big find for a tiny town like Redding! I love the sweetness/crunch/bite of the onion combined with the twist of lime and the collagen-rich broth which revived me after working 24hr shifts. $11.99, served only on weekends.
Tacos:
For $3 you can order street tacos with carne asada, pollo, al pastor, and my favorite, the chicken fajita taco (chicken grilled with bell peppers and vegetables). I like to request mine with the handmade corn tortillas. The best part is that you don't have to cross the border for these - the meat is sliced and stacked on top of raw pineapple and then slow grilled outdoors for two hours until crispy at the edges and juicy in the middle, the pineapple enzymes having tenderized and seasoned the meat. You can smell it from the parking lot because it IS in the parking lol. $3 each
Sopes:
Kind of like a Chicago style street taco if you can envision a deep-dish version of a street taco, but layered with a thin layer of refried beans and taco filling of your choice, topped with freshly cut lettuce and a slice of tomato, drizzled with creamy sauce and crisped a bit prior to serving. Delicious, especially with a drizzle of their spicy sauce! These are very filling, so try one before you order anything else. $4
Martin (pronounced Mar-TEEN) is the proprietor. He immigrated from Guerrero, Mexico at the age of fifteen and brought with him his mother's recipes. We are all the luckier for this! 8 years ago he took over the Pasta Pronto Restaurant, and only 1 year ago began offering Mexican food as a special which has taken off, as it deserves to.
This place is very family friendly (large tables, booths) and with fresh flowers at each table. They serve beer, wine, Mexican coke and Jarritos and also a self-serve soda fountain. They take credit, cash, etc but not checks. You order first from the counter and then they bring the food to you. Warm and friendly service tops the experience.
Come early as the parking lot is tiny - to snag a booth :)

When We are in Redding we like to stop into Pasta Pronto in hopes that we catch the Grilled Salmon Special. When we pull up and see the blackboard kiosk with Grilled Salmon Special we celebrate. YES!!!
It is just plain good. Consistent, Moist, wonderfully mild flavor. We lucked out two evenings in a row last week after hard days of dragging and burning branches broken off in the winter storms we did not want to cook or pay too much at a fancy restaurant.
Pasta Pronto came thru again. Keep it up Chef. -

Family owned restaurant with absolutely amazing food. One of the best places to eat in town for Italian food. They even serve tacos and menudo on Saturdays and Sundays which is to die for! 12/10 would recommend! Great for lunch, dinner and date nights! Absolutely love the owners.

Best breakfast in town. We visit Redding very often to see family and have been to Pasta Pronto in the past for dinner which was good. They are now open for Breakfast from 6-11 daily.
My brother stumbled on them being open and new favorite place. Their menu is varied and the items are fresh. Homemade Hollandaise sauce, fresh squeezed orange juice, Tri-tip burrito, egg white omelet. So good! Pancake in the shape of a bear for my niece.
